1 cup shortening or butter
1 cup sugar
1 cup brown sugar
2 eggs
2 cups all-purpose flour
1 tsp baking soda
1 tsp salt w/ shortening or
1/2 tsp w/ butter
1/2 tsp baking powder
1 tsp vanilla
2 cups quick or regular oatmeal
1/2 cup chocolate chips or more if you like.
1 cup coconut (optional)
Cream together sugars and shortening (butter).
Add egg and vanilla.
Mix up dry ingredients in a seperate bowl.
Add to wet ingredients.
Add in chocolate chips.
Mix together well.
Bake at 350 degrees for 7 - 10 minutes.
Makes 3 to 4 dozen.
Dough can be frozen. Best if used within 3 months.
